Sweet Potato Black Bean Salad
This salad is a real party pleaser! Rich in fiber, protein and complex carbohydrates along with important plant-based nutrients, this recipe is a winner in my family's playbook!! Make a large batch on the weekend and bring as an appetizer to your week night get together, eat as a snack on its own during the day, top over a green salad for lunch, or roll up in tortilla shells for a new take on classic Tuesday Tacos. *BATCH MAKE THIS RECIPE - LEFTOVERS ARE HELPFUL AND WILL SAVE TIME FOR MULTIPLE MIX-MATCH MEALS
INGREDIENTS:
1-2 Sweet Potatoes (roasted, cut into cubes)
1 can Black Beans
2 cups Quinoa (we had leftovers from the week)
handful Cilantro
1-2 Lime
1 Avocado, sliced
Generous shake of FRANKS RED HOT
DIRECTIONS
Mix all together and enjoy!
