6 Ingredient Red Curry Skillet Meal
It doesn’t need to be extravagant or overly complicated. A lot of my meals typically look like this with just a different veggie, starch, protein and spices/dressing. We become too over stimulated not just with what’s going on in our lives, but even with food - sometimes the basics are exactly what we need. Whole Foods. Fresh. A few spices/herbs #keepitsimple
INGREDIENTS
▪️ 1 whole zucchini, chopped⠀
▪️1/2 sweet potato, diced seal⠀
▪️few handfuls of kale⠀
▪️protein of choice - ground beef, turkey, chicken or tofu *preferably grass fed/organic if doing meat ⠀
▪️1-2 Tbsp red curry paste⠀
▪️1-2 TBSP (or a few shakes) of fish sauce ⠀
▪️1 TBSP minced garlic⠀
⠀
Add your sweet the a hot skillet first. You may need to add some oil to the pan to prevent from sticking. Stir for about 5 minutes until starting to soften (add a pan lid to speed up the cooking process)
Add meat to the skillet and start to stir around util starting to brown.
Mix in curry, garlic, fish sauce and add remaining ingredients.
Add remaining veggies/ taste and add any more curry or fish sauce for flavor.
