Roasted Brussels Sprouts with Bacon
Brussels sprouts and Bacon - I don't think anyone can go wrong here! You might be thinking - Kristen..Bacon..really? I know, it is high in saturated fat and is something I typically avoid, however, I recommend using these foods as small condiments occasionally - it is a great way to season and flavor up your food!! Instead of 4 large pieces of bacon use ONLY ONE slice (or 2 if they are mini small slices). The goal here is to help you transition into more plant based eating, but knowing that occasionally you may bring these foods into your diet - as long is it is not an every day thing! I love bringing these bacon brussels sprouts to a holiday party because I know everyone will like it, and it's a great way to introduce more veggies to the plate. Remember though - use bacon sparingly - you only need 1 slice to give the flavor you need!! Enjoy this tasty dish paired with any main entree and save for lunch to mix up with quinoa or grilled chicken in a salad. I'm licking my lips already!
1-2 Strips Bacon (yes, I am using bacon, but use ONLY 1-2 strips for flavor)
1 Bag (or 1lb. brussels sprouts), ends removed, chopped in halves
Onion, chopped (optional)
kosher salt/pepper
Directions: Cook bacon strips in a large skillet over medium-high heat until crispy. Remove from heat and roughly chop. Keeping small amount of bacon grease in the pan, add your brussels sprouts (and option to add chopped yellow onion) to the skillet and cook, until sprouts are golden brown (8-10 minutes). Season with salt/pepper to taste, add bacon back to the pan and stir to combine well. Serve and enjoy!
