Winter Warming Skillet
Quick Winter Warming Skillet…. what I will be enjoying for most of my meals over the next few days! Very grounding and soothing for the soul, high in iron, B vitamins, Anti-microbials/anti bacterials, Fiber, Vitamin K, antioxidants… Good for gut health, immune health, skin, and grounding for the soul/mental aspect and CHI! As I like to say often as I hold some delicious warming food to my mouth, “this is sooo good, medicineeee”. .
▪️1 lb grass fed ground beef (or do turkey!)
▪️Large Pack of mushrooms
▪️large bunch of celery, chopped
▪️3 large carrots, chopped
▪️1 onion, chopped
▪️garlic
▪️ bone broth
▪️1/2 bunch fresh parsley, chopped

▪️Cook beef - add 1/2 onion/garlic, cook until brown. Remove from skillet. ▪️add 1/2 onion chopped, garlic to skillet for 2 min. Add celery, mushrooms, carrots and let sauté for 3 min (add some salt and bone broth as needed)
▪️combine meat/veggies & top with fresh parsley. I keep this in the fridge and eat as is OR I add it to a saucepan when I want to heat up for a meal and add as much bone broth as I want (to make it either as a soup or maybe just to give a little more flavor to eat as a bowl as is). If I’m feeling more carbs I’ll have with a whole grain piece of toast or serve it with some extra sweet potatoes/rice!
**** Vegetarian option - swap beef for chickpeas! YUM!
