Chicken Mushroom Skillet
Another winning 🥘#MealPrep this week 🙌… I legit had this post workout for breakfast it’s so good - haha I know odd but it works for me!!! Lots of substitutions you can make too so a great base easy recipe you can adjust to your liking! 😁
▪️2 boxes mushrooms, (pre sliced for ease)
▪️1 yellow onion, chopped
▪️garlic
▪️1 full celery bulk, chopped ▪️2 lb chicken breast (poached/chopped)
▪️1 bag frozen peas
▪️1 spaghetti squash
▪️1/4/-1/2 container chicken broth
▪️rosemary for seasoning
- ***if you want to make it with a cream based sauce use coconut milk w/ arrowroot starch to thicken .

▪️Heat skillet with onion/garlic, add celery, mushrooms, carrots cook aromatics 5 min. ▪️Add chicken broth, spices.
▪️Add cooked chopped chicken (I poached chicken breast in water/salt, takes 10 min then chopped up into cubes).
▪️Add frozen peas to finish off and add any additional herbs/spices to flavor. ▪️Meanwhile bake your spaghetti squash in the oven of microwave and serve your chicken mixture on top of squash (or pasta of choice!). .
